Serves Not specified
Cheesy Taco Soup - made with 1 pound ground beef, 2 tablespoons taco seasoning, 0.25 cup water, 1 jar Tostitos Salsa Con Queso, 1 can potato soup, 1.25 cups sour cream, and more.
Ingredients
- 1 pound ground beef
- 2 tablespoons taco seasoning
- 0.25 cup water
- 1 jar Tostitos Salsa Con Queso
- 1 can potato soup
- 1.25 cups sour cream
- 1 can fire roasted diced green chilis
- 1.25 cups beef broth
- 0.5 cup chicken broth
- 1 cup frozen corn
- 1 cup pinto beans or black beans
Instructions
- Brown the beef: In a large skillet, brown the ground beef over medium heat and drain any excess fat.
- Season: Add the taco seasoning and water, cooking until the water is absorbed.
- Combine: Transfer the taco meat to a large pot or Dutch oven. Stir in the salsa con queso, potato soup, sour cream, beef broth, and chicken broth until the sour cream melts.
- Add remaining ingredients: Stir in the fire-roasted green chilies, frozen corn, and pinto or black beans.
- Simmer and serve: Bring the mixture to a boil, then reduce the heat and simmer (stirring often so it doesn't stick) until ready to serve. Top with jalapeños and serve with tortilla chips or Fritos.
