Street Corn Chicken Pasta Salad

Street Corn Chicken Pasta Salad — made with 1 lb fusilli pasta, 1 lb grilled chicken, cubed, 6 slices bacon, cooked and chopped, 1 green bell pepper, diced, 1 cucumber, diced, 1/2 red onion, diced, and more.
Ingredients
- 1 lb fusilli pasta
- 1 lb grilled chicken, cubed
- 6 slices bacon, cooked and chopped
- 1 green bell pepper, diced
- 1 cucumber, diced
- 1/2 red onion, diced
- 1/4 cup cotija cheese
- 2 tbsp fresh cilantro, chopped
- 5 ears grilled corn, sliced off the cob
- 2 tbsp olive oil
- 1 lime, juice
- 1 tsp elote seasoning
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp oregano
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 cup plain Greek yogurt
- 2 tbsp mayo
- 2 tbsp sour cream
- 1 lime, juice
- 1–2 tsp elote seasoning
- salt, to taste
- pepper, to taste
Instructions
- Bring a large pot of salted water to a boil and cook the fusilli until al dente. Drain and rinse with cold water.
- In a bowl, mix together the olive oil, lime juice, elote seasoning, paprika, garlic powder, onion powder, oregano, salt, and pepper. Add the chicken and toss to coat well.
- Grill the chicken until fully cooked, then let it rest for a few minutes before cubing.
- Grill the corn until charred, then carefully slice the corn off the cob.
- Make the elote ranch by whisking together the Greek yogurt, mayo, sour cream, lime juice, elote seasoning, salt, and pepper until smooth and creamy.
- In a large bowl, add the cooked pasta, chicken, bacon, bell pepper, cucumber, red onion, cotija cheese, cilantro, and grilled corn.
- Pour the dressing over everything and toss until fully coated.
- Taste and adjust with extra lime juice, salt, or elote seasoning if needed & enjoy!!
