Street Corn Chicken Pasta Salad — made with 1 lb fusilli pasta, 1 lb grilled chicken, cubed, 6 slices bacon, cooked and chopped, 1 green bell pepper, diced, 1 cucumber, diced, 1/2 red onion, diced, and more.

  1. Bring a large pot of salted water to a boil and cook the fusilli until al dente. Drain and rinse with cold water.
  2. In a bowl, mix together the olive oil, lime juice, elote seasoning, paprika, garlic powder, onion powder, oregano, salt, and pepper. Add the chicken and toss to coat well.
  3. Grill the chicken until fully cooked, then let it rest for a few minutes before cubing.
  4. Grill the corn until charred, then carefully slice the corn off the cob.
  5. Make the elote ranch by whisking together the Greek yogurt, mayo, sour cream, lime juice, elote seasoning, salt, and pepper until smooth and creamy.
  6. In a large bowl, add the cooked pasta, chicken, bacon, bell pepper, cucumber, red onion, cotija cheese, cilantro, and grilled corn.
  7. Pour the dressing over everything and toss until fully coated.
  8. Taste and adjust with extra lime juice, salt, or elote seasoning if needed & enjoy!!
