Cottage Cheese Cinna Bread — made with 1 cup nancy’s cottage cheese, drained, 1/4 cup raw milk, 1/4 cup organic plain greek yogurt, 1/4 cup raw honey, 2 large farm fresh eggs, 1/4 cup melted butter, and more.

  1. Preheat oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
  2. In a large bowl, blend the cottage cheese until smooth.
  3. Add the milk, greek yogurt, honey, eggs, melted butter, and vanilla extract to the cottage cheese. Mix until well combined.
  4. In a separate bowl, whisk together the flour, protein powder, baking powder, baking soda, and salt.
  5. Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.
  6. In a small bowl, mix together the melted butter, brown sugar, and cinnamon for the filling.
  7. Pour half of the dough into the prepared loaf pan. Spread half of the cinnamon filling mixture over the dough.
  8. Top with the remaining dough and spread the remaining cinnamon filling on top.
  9. Use a knife or skewer to swirl the cinnamon filling into the dough to create a marbled effect.
  10. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  11. While the bread is cooling, prepare the glaze by mixing the powdered sugar, milk, and vanilla extract until smooth.
  12. Drizzle the glaze over the cooled bread before slicing.
