Cottage Cheese Cinna Bread

Cottage Cheese Cinna Bread — made with 1 cup nancy’s cottage cheese, drained, 1/4 cup raw milk, 1/4 cup organic plain greek yogurt, 1/4 cup raw honey, 2 large farm fresh eggs, 1/4 cup melted butter, and more.
Ingredients
- 1 cup nancy’s cottage cheese, drained
- 1/4 cup raw milk
- 1/4 cup organic plain greek yogurt
- 1/4 cup raw honey
- 2 large farm fresh eggs
- 1/4 cup melted butter
- 1 tsp organic vanilla extract
- 1 cup whole wheat flour, or 1 1/4 cup almond flour
- 1/2 cup vanilla protein powder
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp real salt
- 1/4 cup organic coconut sugar
- 2 tbsp organic ground cinnamon
- 1/2 cup organic powdered sugar
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- In a large bowl, blend the cottage cheese until smooth.
- Add the milk, greek yogurt, honey, eggs, melted butter, and vanilla extract to the cottage cheese. Mix until well combined.
- In a separate bowl, whisk together the flour, protein powder, baking powder, baking soda, and salt.
- Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.
- In a small bowl, mix together the melted butter, brown sugar, and cinnamon for the filling.
- Pour half of the dough into the prepared loaf pan. Spread half of the cinnamon filling mixture over the dough.
- Top with the remaining dough and spread the remaining cinnamon filling on top.
- Use a knife or skewer to swirl the cinnamon filling into the dough to create a marbled effect.
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- While the bread is cooling, prepare the glaze by mixing the powdered sugar, milk, and vanilla extract until smooth.
- Drizzle the glaze over the cooled bread before slicing.
