Creamy Chicken & Cheese Frozen Burrito

Creamy Chicken & Cheese Frozen Burrito — made with 1 pound boneless skinless chicken thighs, 1 packet taco seasoning, 200 g 2% Plain Greek yogurt, 80 g tomato sauce OR crushed tomatoes OR red enchilada sauce, 50 g pepperjack cheese, 2 laughing cow cheese wedges, and more.
Ingredients
- 1 pound boneless skinless chicken thighs
- 1 packet taco seasoning
- 200 g 2% Plain Greek yogurt
- 80 g tomato sauce OR crushed tomatoes OR red enchilada sauce
- 50 g pepperjack cheese
- 2 laughing cow cheese wedges
- 2-3 tablespoons corn, (optional)
- 2-3 tablespoons black beans, (optional)
- 6 burrito tortillas, (mine were ~180 Cals each)
Instructions
- If you plan on eating within a week, you can refrigerate and reheat time will be much lower. For longer term storage, freeze.
- Oven heating instructions: Keep in foil, add to oven at 450 for 30-40 mins.
- Microwave: Remove from foil, cover with damp paper towel, microwave 4-5 mins (time varies based on appliance).
