Crispy Sweet Potato Taco Shells

Crispy Sweet Potato Taco Shells — made with 1 large sweet potato, grated, 0.5 cup mozzarella cheese, 1 egg, spices of choice, garlic, paprika, salt, pepper, 200 g lean ground beef, cooked, 0.5 cup tomato sauce, infused with onion & garlic, and more.
Ingredients
- 1 large sweet potato, grated
- 0.5 cup mozzarella cheese
- 1 egg
- spices of choice, garlic, paprika, salt, pepper
- 200 g lean ground beef, cooked
- 0.5 cup tomato sauce, infused with onion & garlic
- 1 tbsp taco seasoning
- shredded lettuce
- red onion
- fresh cilantro
- homemade guacamole
- lime wedges
Instructions
- Mix the grated sweet potato, mozzarella, egg, and spices.
- Shape into 6 thin circles on parchment paper.
- Bake at 400°F (200°C) for 15-18 mins until the edges are crispy.
- While warm, gently press the circles between the cups of an upside-down muffin tin to form taco shells. Let cool.
- Brown the ground beef, add taco seasoning and your garlic-onion tomato sauce, then simmer until thick.
- Load your crispy sweet potato shells with lettuce, onion, the savory taco meat, cilantro, and a big scoop of guacamole. Squeeze fresh lime on top and enjoy!
