Grape Pie (9")

Grape Pie (9") — made with 1 pie crust, 4 1/2 cup concord grapes, about 2 quarts, 1 cup sugar, 1/8 cup cornstarch, up to a 1/4 cup; can also use flour, 2 tsp. lemon juice, 1/8 tsp. salt, and more.

- 4 1/2 cup concord grapes, about 2 quarts
- 1 cup sugar
- 1/8 cup cornstarch, up to a 1/4 cup; can also use flour
- 2 tsp. lemon juice
- 1/8 tsp. salt
- 1/2 cup brown sugar
- 1/2 cup oats
- 1/4 cup flour
- 1 stick butter, (1/2 cup)
Instructions
- Wash grapes and remove skins. Reserve skins in a large bowl. Put pulp in a saucepan.
- Boil pulp and cook until soft. While hot, put pulp through a strainer to remove seeds. Combine strained pulp and skins in a large bowl.
- Preheat oven to 425°F.
- Mix sugar, lemon juice, salt, and cornstarch in with the grapes.
- Make streusel topping: in medium bowl, mix together brown sugar and flour flour. Stir in oats. Cut in butter until mostly in small pieces.
- Sprinkle streusel over pie. Bake for 35-40 min (bubbling in center).
