Lemon Chicken Orzo

Lemon Chicken Orzo

Serves 4

Lemon Chicken Orzo - made with 1.5-2 lb chicken breast, diced, 1 cup orzo pasta, 2 cups fresh spinach, 3 cups chicken broth, 1 cup heavy cream, 2 cloves garlic, minced, and more.

Ingredients

Instructions

  1. Heat a large cast iron pan over medium heat. Spray with cooking spray or a splash of olive oil. Add the diced chicken and allow it to cook for 5-7 minutes, stirring occasionally until it cooks through completely.
  2. Add the minced garlic, sautéing for about a minute. Remove the chicken and set aside for later.
  3. Pour in the chicken broth and bring it to a boil.
  4. Add the orzo to the broth, stirring occasionally and following the package instructions for cooking time, typically around 8-10 minutes.
  5. After the orzo cooks, lower the heat and stir in the heavy cream, lemon juice and zest, dried oregano, and spinach. Stir until the spinach wilts and the sauce transforms into a creamy delight. Add cooked chicken back in and toss to coat.
  6. Season with salt and pepper to taste. Give everything a final stir.
  7. Garnish with a lemon wedge and serve.
