One Pot Creamy Taco Ramen — made with 0.5 lb lean ground beef, 2 tbsp chopped onion, optional, 2 tbsp taco seasoning, 0.75 cup diced tomatoes, drained, 1 cup beef broth or water, 0.25 cup shredded cheddar or Mexican blend cheese, and more.

  1. Brown the Beef: In a large skillet, brown the ground beef with onion over medium-high heat until no longer pink. Drain excess fat.
  2. Make the Sauce: Add the taco seasoning, diced tomatoes, and water (or beef broth) to the beef. Bring to a simmer.
  3. Cook Noodles: Add the ramen noodle blocks to the skillet, breaking them up slightly. Reduce heat, cover, and cook for 3–5 minutes until the noodles are tender, stirring occasionally.
  4. Make it Creamy: Remove from heat and stir in the shredded cheese and sour cream until melted and smooth.
  5. Serve: Top with green onions and crushed chips if desired.
