One Pot Creamy Taco Ramen — made with 0.5 lb lean ground beef, 2 tbsp chopped onion, optional, 2 tbsp taco seasoning, 0.75 cup diced tomatoes, drained, 1 cup beef broth or water, 0.25 cup shredded cheddar or Mexican blend cheese, and more.

- 2 tbsp chopped onion, optional
- 2 tbsp taco seasoning
- 0.75 cup diced tomatoes, drained
- 1 cup beef broth or water
- 0.25 cup shredded cheddar or Mexican blend cheese
- 0.25 cup sour cream, optional
- 1 package ramen noodles, discard seasoning packet
- green onions or crushed tortilla chips
Instructions
- Brown the Beef: In a large skillet, brown the ground beef with onion over medium-high heat until no longer pink. Drain excess fat.
- Make the Sauce: Add the taco seasoning, diced tomatoes, and water (or beef broth) to the beef. Bring to a simmer.
- Cook Noodles: Add the ramen noodle blocks to the skillet, breaking them up slightly. Reduce heat, cover, and cook for 3–5 minutes until the noodles are tender, stirring occasionally.
- Make it Creamy: Remove from heat and stir in the shredded cheese and sour cream until melted and smooth.
- Serve: Top with green onions and crushed chips if desired.
