Street corn crunchers
Serves 6
Street corn crunchers — made with 2 cup cooked shredded chicken, can be rotiserrie or pre-cooked breast, 3/4 cup corn, 3/4 cup plain greek yogurt, 2 Tbs mayo, 1 tsp taco seasoning, 1/2 cup shredded mexican cheese, per egg roll, split into 2, and more.
Ingredients
- 2 cup cooked shredded chicken, can be rotiserrie or pre-cooked breast
- 3/4 cup corn
- 3/4 cup plain greek yogurt
- 2 Tbs mayo
- 1 tsp taco seasoning
- 1/2 cup shredded mexican cheese, per egg roll, split into 2
- 1 egg roll wrapper
Instructions
- Mix first 5 ingredients and half of the shredded chicken
- Lay out 1 egg roll and lay down the rest of the shredded cheese
- Place 1/6 of the chicken mixture onto the top of the shredded cheese
- Tuck and roll the egg rolls until you have 6
- Lightly spray or brush with oil
- Air fry or shallow fry in skillet
- Dip in queso or salsa
