Taco Ramen Noodles

Taco Ramen Noodles — made with 1/2 pound lean ground beef, 90% lean, 2 tablespoons onion, finely chopped, 3/4 cup rotel, drained, 2 tablespoons taco seasoning, 1 cup beef broth, 1 package ramen noodles, 3 ounces, discard seasoning packet, and more.

  1. In a small skillet, cook beef and onion over medium heat until the meat is no longer pink, breaking beef into crumbles; drain.
  2. Stir in the tomatoes, taco seasoning, cream cheese, and beef broth. Bring to a boil.
  3. Add ramen noodles (discard seasoning packet or save for another use). Cook and stir until noodles are tender, 3-5 minutes.
  4. Spoon into serving bowls; sprinkle with cheese and, if desired, tortilla chips.
